Aged cheese characterized by its long maturation process of at least eight months, 8 moons. Produced exclusively with milk obtained in the months of May and June, we store them in chambers with carefully controlled conditions to obtain an aged cheese of excellent quality.<\/p>

Exterior Appearance:<\/strong> Hard rind, pale yellow to brown in color, which darkens and shows fissures with maturation.<\/p>

Texture:<\/strong> Compact and firm paste, ivory in color, which becomes grainy and brittle over time.<\/p>

Aroma:<\/strong> Intense, with notes of nuts and dried herbs.<\/p>

Flavor:<\/strong> Deep and complex, with a mix of spiciness, saltiness and sweetness, and a long, spicy finish<\/p>
