Our shepherd’s cheeses are a gastronomic gem of recognised quality, made exclusively with raw milk and natural rennet from our flock of Latxa sheep produced on the slopes of the Malloas. All our cheeses are handmade, with the ancestral knowledge of the shepherds of the Sierra de Aralar and using new technologies in their production.
Our cheeses have the Idiazabal Designation of Origin and the Artzai Gazta Association, obtaining for both the consumer and us maximum security in the quality of the milk, as well as in the cheese, since the controls are strict.
