Limited Edition Idiazabal Cheese

Result of synergy between shepherds, tasters and designers

Ardilarre is the fruit of the union of shepherds who make Idiazabal cheese from Caserío with Designation of Origin, renowned for their cheeses, cheese tasters and designers. Together, they have a firm purpose: to make known to the world a unique cheese, of limited production, made with the care and attention of those who are passionate about their work and the desire to satisfy the most demanding customers.

At the end of the cheese-making season, an exhaustive selection of Ardilarre cheese is made. Each piece is carefully evaluated based on its size, aroma, flavour and texture. In this way, it is guaranteed that only the highest quality cheeses bear the Ardilarre seal. Annual production is limited to a maximum of 2,000 pieces, making this cheese a true gastronomic gem.

Ardilarre cheeses are presented in a carefully crafted and numbered box and band, which gives them a touch of exclusivity and distinction. Each piece is unique, not only for its exceptional flavour, but also for its impeccable presentation.
Made using ancestral methods, our cheese is the fruit of a commitment to nature and the environment where our Latxa breed sheep graze.

We have joined together with the firm purpose of making known to the world a unique cheese, of limited production, made with the care and attention of those of us who are passionate about our work and the desire to satisfy the most demanding customers. Our roots have been born in the farmhouse, with our ancestors, from their wisdom and the well-done work that we have inherited.
It is presented in a cardboard box, vacuum-packed and it is recommended to keep it refrigerated between 4 and 8 ºC.

Exterior appearance: Hard rind, pale yellow in colour.

Texture: Compact and firm paste, ivory in colour.

Aroma: Moderate, with notes of fresh milk, herbs and a slight touch of nuts.

Taste: Balanced, with a soft taste of sheep’s milk, a slight touch of nuts and a slightly saline background.
