Aged cheese characterized by its long maturation process of at least eight months, 8 moons. Produced exclusively with milk obtained in the months of May and June, we store them in chambers with carefully controlled conditions to obtain an aged cheese of excellent quality.
Exterior Appearance: Hard rind, pale yellow to brown in color, which darkens and shows fissures with maturation.
Texture: Compact and firm paste, ivory in color, which becomes grainy and brittle over time.
Aroma: Intense, with notes of nuts and dried herbs.
Flavor: Deep and complex, with a mix of spiciness, saltiness and sweetness, and a long, spicy finish
